Ricotta with Green Peas and Shallots
Springtime is finally here, in the form of our gorgeous tortelloni with ricotta, green peas and shallots. Tiny garden peas are sauteed in butter with a sprinkling of shallots then combined with Parmigiano Reggiano and our whole milk ricotta. The luxurious creaminess of our ricotta, paired with the delicate sweet pea flavor and garlicky essence of shallots will delight you.
Roasted Sweet Potatoes
We roast sweet potatoes until they're beautifully caramelized and combine them with amaretti* crumbs and a touch of Parmigiano Reggiano for these custard-smooth tortelloni. Kids and those who wish to restrict their consumption of dairy products love this stuffed pasta. *Amaretti contain nuts.
Ricotta with Roasted Leeks
These tortelloni are filled with our downy whole milk ricotta, a touch of Parmigiano Reggiano and deeply caramelized leeks.
Ricotta with Asparagus
Filled with whole milk ricotta, Parmigiano Reggiano and nutty, fruity asparagus spears sautéed in butter, our popular Asparagus Tortelloni are delicious and beautiful.
Ricotta with Roasted Spring Vegetables
These light and fluffy tortelloni are intensely creamy, rich and decadent. Filled with whole milk ricotta, Parmigiano Reggiano, sweet green peas, tender green beans and roasted asparagus, these feathery pillows are graced with the lightest touch of mint.
Rainbow Swiss Chard
These smooth, light tortelloni are filled with earthy, buttery swiss chard and snowy whole milk ricotta and Parmigiano Reggiano.
Porcini
A city-wide favorite, our porcini mushroom tortelloni are earthy and robust. These tortelloni do not contain ricotta; rather, we combine a classic saute of garlic, shallots, button mushrooms and porcini with bechamel. Once cooked, the bechamel melts into a heavenly, creamy sauce inside the tortelloni.
Roasted Butternut Squash
Light yet rich and mellow with deep caramel flavors from long, slow roasting, our squash tortelloni are the very essence of fall dining. Crushed amaretti cookies add a light kiss of sweetness and Parmigiano Reggiano lends a sharp, salty edge. These tortelloni contain nuts.
Radicchio and Gorgonzola
The very definition of sinful richness, these outstanding tortelloni combine slow-braised radicchio with thick-as-velvet mascarpone cheese and piquant imported imported Italian Gorgonzola. The radicchio's silkiness and barest bitterness are complemented by the mascarpone's sweet creaminess and the Gorgonzola's distinctive tang.
Tortelloni With Ricotta, Asiago and Spek
The bits of imported Italian Asiago fresco we add to our whole milk ricotta melt once the tortelloni are cooked, creating heavenly little pockets of sweet melted cheese. Spek, a smoked ham from the Tyrolean region of Italy , is similar in flavor to prosciutto and lends a wonderful hint of smokiness.
Tortelloni With Ricotta, Goat Cheese and Pancetta
A Sardinian goat cheese called Pantaleo adds a peppery, nutty flavor to these tortelloni, and pancetta provides a wonderful salty bite in contrast to our ricotta's sweet creaminess.
