Tortelloni With Ricotta, Asiago and Spek

The bits of imported Italian Asiago fresco we add to our Whole Milk Ricotta melt once the tortelloni are cooked, creating heavenly little pockets of sweet melted cheese. Spek, a smoked ham from the Tyrolean region of Italy , is similar in flavor to prosciutto and lends a wonderful hint of smokiness.
